Like A Child’s Love

Children are simply beautiful. Interacting with children all day long, one is always fascinated by the numerous expressions, emotions they undergo, the innocent laughter and their mischief. A child’s love is always untainted at heart. Unfortunately as they grow from toddlers to adolescence, we adults and collectively society as well as media influences them, such that they lose their own selves and plunge into the niche that society carves for them. As parents, it is difficult to fight against this phenomenon as this has become the way of life and children will eventually grow, evolve and develop. Which is why, the growing years of a child are the most precious ones for parents and guardians.

The concept of unconditional love is witnessed very often through parenting. A child’s love is never labelled nor constrained. In their very early years, their unblemished minds and hearts have no limits or barriers or categorization on their love, kindness and care. A child’s reasoning mayn’t be understood by adults. Yet as we wait to see the turn of events, one realizes that their acts of childhood are always based on their untainted guileless love and kindness. To be like a child, is a gift for the mind, body and spirit.

The “PB&J” Way

One of the iconic American sandwich is the “PB&J sandwich”, which includes one or more layers of peanut butter and one or more layers of jelly ( jam in British English) on bread. Eaten open faced or with one slice of bread folded over ( a “half sandwich”); this sandwich is quite common and popular among Americans especially the children. The history of the peanut butter and jelly sandwich is the story of three essential ingredients; all of which have been around for a long time, when combined together gives us the American favorite and enduring PB&J sandwich; which slowly soared in popularity across the world.

Layer each bread slice with two tablespoons of Peanut butter. The forerunner of the peanut butter of today was when a St. Louis physician, Dr. Ambrose Straub had made a peanut paste for geriatric patients who had trouble swallowing or had bad teeth (1880s). Around the same time, Dr. John Harvey Kellogg ( of the cereal fame) was the first to patent a process for manufacturing peanut butter. Post the Chicago World Fair (1983), where the peanut butter was first introduced and the St. Louis World Fair (1904) when Dr Straub had got a food company to develop the peanut spread further; their popularity rose high with grocery stores stocking up on peanut butter. Upscale tea rooms of New York City, peanut butter appeared as delicacies with watercress, sandwiches, on toasted triangles with soda crackers as well.

Then add two tablespoons of the iconic “strawberry Jelly” to the peanut butter layered bread slices, merge them and enjoy. The development of the jelly (although it has been around for a long time), in the case of this quintessential American PB&J sandwich can be credited to Paul Welch. He had secured a patent (1917) for pureeing grapes and turning them into jelly which he had developed and advertised as Grapelade. This was popular with America’s troops in WWI, who had brought the trend of Grapelade spread on bread, back to their homes after the war.

The first peanut butter and jelly sandwich recipe appeared in the Boston Cooking School Magazine of Culinary Science and Domestic Economics (1901) written by Julia Davis Chandler. The recipe had advised to use currant or crab-apple jelly with the combination being delicious and as far as known then, original.

With creamier peanut butter (doesn’t stick to the palate) being made, Grapelade and pre-sliced bread becoming popular, the PB&J slowly gained popularity. During the Great Depression of 1930s, families discovered that peanut butter had provided a less expensive but satisfying high protein substitute. Yet the major breakthrough came when this was included in the US Military ration menus of World War II. With peanut butter being high-protein, shelf-stable and easily portable; grape-lade on its’ second trip with the soldiers and pre-sliced bread readily available; the combination of the three became a part of the American soldier’s life.

When the soldiers came home from the war, the PB&J sandwich scored with the families. With the great taste and easy to make, both the young and the old loved it, especially when budgets were tight and the times were difficult.

Today a wide variety of mix ups and combinations have been seen across globally, with honey or sliced fruit substituted for the jelly component or the transition to “almond butter and jelly” (AB&J) sandwiches. With marshmallow fluff being substituted for the jelly, or added for extra flavor; the “fluffernutter” sandwich is created. Cream cheese substituted for the peanut butter ( a cream cheese and jelly sandwich) or Nutella (possible substitute for one of the spreads) with PB or Jelly are other common variants.

Slight changes can be made to the original recipe by using an artisan bread and heating it in butter, which melts the peanut butter and jelly; creating a crispy, buttery crust on the bread similar to when cooking grilled cheese. White or brown bread alternatives include rye, whole grain or sourdough bread. One other popular variant of “PB&J” sandwich is “the peanut butter and Lucy banana sandwich” or peanut butter, banana and bacon sandwich,known as an Elvis sandwich or simply the Elvis, consists of toasted bread slices with peanut butter, sliced or mashed banana, and sometimes bacon. Honey is seen in some variations of the sandwich as well alternative fillings of sweet potato, carrots, pumpkin, and apples. The sandwich is frequently cooked in a pan or on a griddle, served hot. Additionally the PB&J can be added to pancakes, crepes and even french toast.

Like these combinations, many more are being made with creative cooking on the rise. Just like variety adds the spice to life, jelly up with peanut butter on this day as foodimentarians celebrate “Peanut butter and Jelly” Day today (April 2nd). Mix, match ad spice it up for a quick break from the routine cooking with both kids and family enjoying the break from the routines or predictability the day.

For the readers of the above news on the Daily Mirror online version last year, had resulted in a frenzy of whether this was true or was it an “All Fools Day Prank”. Being mixed with the “true news” of the society, food, travel and living sections; it wasn’t easy to ascertain whether one was going to really taste avocado, sourdough or charcoal in their drink.

One of the days dreaded the most, especially at work, school or neighbourhood, is the first day of April, where the day is pretty confusing for each hour goes by the wait of “being pranked”. Each day this year, from social media to official meetings, one is always second guessing everything. As for pranksters, its’ a day of freedom, fun and revelry.

Yet when the prank is actually the truth, one may feel a bit razzed. For instance people who celebrate their birthdays on April First have always been questioned, even though they are speaking the truth. Remember the headlines that state “the African continent can split into two” after an enormous crack appears. Well, it’s actually true for a large crack, several miles long and growing accompanied with seismic activity had appeared in south-western Kenya causing the Nairobi-Narok highway to collapse. Researchers have attributed this to activity between the tectonic plates in Earth’s crust and upper mantle. Today the rift still continues to grow and an expert says it’s evidence that the continent is breaking apart.

Yet news like this, practical jokes and hoaxes especially on All Fools’ Day or April Fools’ Day spreads mass confusion (which was or wasn’t the purpose all along). Why this particular day ? The origin behind this day is quite interesting, with various versions and tales trending around the world.

As per Geoffrey’s Chaucer’s “The Cantebury Tales”, New Years’ Day used to be celebrated around April. With the Gregorian Calendar (1582, France) being introduced by Pope Gregory XIII with January 1st to be celebrated as “New Years’ Day.” For those who refused to support this,; they were mocked and sent on fools’ errands on April 1st.

Another disputed association between April 1st and foolishness also comes from Geoffrey Chaucer’s The Canterbury Tales (1392). In the “Nun’s Priest’s Tale”, a vain cock Chauntecleer is tricked by a fox on “Syn March bigan thritty dayes and two.” While readers apparently understood this line to mean “32 March”, i.e. April 1, it wasn’t clear if this was the correct inference. The scholars of today, believe that there is a copying error in the extant manuscripts and that Chaucer actually wrote, “Syn March was gon.” Then the passage would have originally meant 32 days after March ( i.e. May 2nd), the anniversary of the engagement of King Richard II of England to Anne of Bohemia (1381).

French poet Eloy d’Amerval (1508) had referred to “a poisson d’avril” (April fool, literally “Fish of April”), possibly the first reference to the celebration in France. In France, January 1st as New Year’s Day became common only by the mid-16th century and the date was adopted officially as per the Edict of Roussillon (1564). Likewise Flemish poet Eduard de Dene (1539) had written about a nobleman who sent his servants on foolish errands on April 1st.

The origin of April Fools’ Day is different in Netherlands, where it’s often attributed to the Dutch victory at Brielle in 1572, where the Spanish Duke Álvarez de Toledo was defeated (“Op 1 april verloor Alva zijn bril”). Another citation in history was on April 1, 1698 when several people were tricked into going to the Tower of London to “see the Lions washed”.

Few authors have expressed the belief that the origins of April Fool’s Day may go back to the Genesis flood narrative, although this hasn’t been verified by Biblical scholars or historians. As written by the Harper’s Weekly cartoonist Bertha R. McDonald (1908), ” Authorities gravely back with it to the time of Noah and the ark. The London Public Advertiser of March 13, 1769, printed: “The mistake of Noah sending the dove out of the ark before the water had abated, on the first day of April, and to perpetuate the memory of this deliverance it was thought proper, whoever forgot so remarkable a circumstance, to punish them by sending them upon some sleeveless errand similar to that ineffectual message upon which the bird was sent by the patriarch”.

Festivals celebrating a day for pranks has been there since the early Roman times, where “Hilaria” a Roman festival was celebrated. As the name suggests, it was a festival of laughter and hilarity where people would dress up in disguises to fool others and enjoy the spring season. Various countries have different ways to celebrate this day. While across Italy, France, Belgium, and French-speaking areas of Switzerland and Canada, people celebrate April Fools’ Day by trying to stick a paper fish on someone (without being noticed); in Iran jokes were played on each other on ‘Sizdah Be-dar'(the 13th day of the Persian New Year, falling on April 1st or 2nd). On the other hand Spanish speaking countries celebrate similar festivity on the ‘Day of the Holy Innocents’ (December 28 or 29) and in Denmark, this day is celebrated on’Maj-Kat’, which means ‘May-cat’ (May 1st).

Either way the chance to play practical jokes and hoaxes on this day has promoted this trend to continue. For there’s nothing more enriching than genuine innocent fun and laughter for the day.

Once Upon A Time

“…..And they lived happily after.”

One of the many endings often read; fairy tales and bed time classics have been going around for years, doing their fair share of imagination, creativity and togetherness during the childhood years. From the far-fetched tales of talking animals to almost realistic tales; fairy tale also known as magic tale or Marchen is a folklore genre, which typically features dwarfs, dragons, elves, fairies, giants to list a few. The common thread between various folklore tales across the globe is the “moral sense” of right and wrong being instilled in the young minds.

As we grow up, we start cross examining these stories with reality. Then why do we need fairy tales? What are we seeking for in them? Do fairy-tales help us dream of good, affection, triumph over evil ? Are fairy-tales and classics a mirage that hide the true realities of life from children ?

In the fairy tale, joy and love wins with everything being fair especially at the end. From the brave princes to Snow White and mermaids, kind old dwarf to naughty elves; fairy tales bring to life cozy home, adventures and dreams. Yet is the reality different or can we chose to make the best of the beginnings and endings that we receive ?

Far from being extinct, fairy tales do have reasons to stay. The start of any fairy tale is one of adventure, inspiration and dreams. As the story unfolds and trials start; the fight against evil, the power of hope and reassurance that despite all odds things will turn out to be alright in the end when we believe in the true power of love, kindness, honesty and persevere for our dreams. Reassuring us to be ourselves, being honest and treasuring the gifts of life are few of the many subtle messages hidden in a fairy tale or the classics.

In the modern era of “smart technology”, preserving the art of reading aloud, bonding together and family time would go a long way into modeling our children for the future. So read them fairy tales once in a while. Give them stories to love, cherish and dream on. Maybe later in this world it would be easier for them to survive, cope, adapt and live life to their dreams.

“Leave No One Behind”

On the occasion of the World Water Day, an annual UN observance day (March 22nd) marking the importance of freshwater, one is faced with the grave fact of the “rising scarcity” of the freshwater resources. Initially commemorated in 1993 by the United Nations, the theme changes every year, with the theme for 2019 being “Leave No One Behind”. The water crisis to be tackled this year, addresses why marginalized groups like women, children, refugees, disabled and indigenous people are often overlooked in their accessibility to save drinking water.

Being a part of the global network and progressive species on earth, preserving the natural resources as well as attaining universal access to clean water, sanitation and hygiene (WASH) are in line with the target of the development goals across the world as outlined by the UN. While today, a variety of events ranging from educational, theatrical, musical, funding campaigns or lobbying are done to generate awareness and advocate sustainable management of freshwater resources; the realistic truth is that everyday is “water conservation day”. As they often say, habits made young are hard to break, advocating proper and conservative use of water should be initiated at family, school and community level. For conservation and preservation never happens overnight, but is always an ongoing process.

The alarming misuse and wastage of natural resources is still at its’ peak. The sooner we reform, reuse, reduce and recycle; the longer we will be able to still avail benefits from what nature has provided us. Freshwater (2.5–2.75%) is needed for survival, more than saline water (around 97%). Thus conservation is mandatory by the hour. Else despite the presence of water, there would be not a drop to drink easy.

Letters to Cherish

“PS, I Love You” the first novel written by Cecelia Ahern, published in 2004 was adapted as a film three years later. The book is based on a married couple Gerry and Holly, deeply in love with occasional fights, yet both are inseparable. When Gerry suddenly dies of a brain tumor, Holly is set adrift in despair and grief, unable to deal with his death and withdrawing from friends and family. One day her mother calls her informing her of a package addressed to her. It held a series of letters Gerry had left for her before he died, containing messages from him, all ending with “P.S. I Love You”. Each new message fills her with encouragement every month and with Gerry’s words as her guide, Holly slowly embarks on a journey of rediscovery.

Both the book and the movie are heart touching, though I preferred the former. Yet the underlying message beyond the fact that time is never predictable is that we should treasure the good moments to always fall back on. Waiting for a warning bell to strike and remind us of how everything can end in a matter of minutes, it is better to string the good memories for our family and friends as we go on our daily lives.

For our friends, once in a while write about what we love about them, the sorrows which they helped us to overcome, the celebrations that they were there for as well as the occasional clashes and better times. When we journal these events, we realize that we have lots to thank them for. Carry this trend into family, for our husband, kids and parents. There is nothing more precious than the written words of care, love and affection that the digital age can’t equalize. Till this day, I hold the letter that my mother and sister wrote to me when I was in college and they bring back fresh memories every time I feel like reading them.

Once a year, write a letter to your child, regaling the funny stories about what had happened to them that year; about the difficulties, mishaps, joys and fun times. Write down your thoughts concerning their future, your memories and emotions as they went about their days, the important events of that year for family and for each one of them. Add on to the letter with photos, postcards, little stick-ons, tiny notes and other memorabilia which would otherwise disappear later. In the end of the letter, don’t forget to tell them that you love them.

After closing the letter, put it in a binder and forget about it. Keep on writing a letter this every year till they reach the age of majority. On the day they reach the official age of adulthood, give them the folder. It will be an invaluable repository of parental love and memory of their childhood. These letters would be with them through joyful as well as difficult moments and trying times. Above all, it will be a reminder that your love will be with them always.

Of Chips and Crisps

“No One Can Eat Just One”

Ask any school kid, most would know the famous tag line, “Betcha Can’t Eat Just One” of Lay’s® Potato Chip Slogan from the early 1960’s. Over the years, although the slogans have under gone a little modification with endorsers changing, the flavours still holds us captive.

Early recipes similar to the potato crisps of today, was in William Kitchiner’s cookbook “The Cook’s Oracle” (1817) with “Potatoes fried in Slices or Shavings”. The methodology reads to “peel large potatoes, slice them about a quarter of an inch thick, or cut them in shavings round and round, as you would peel a lemon; dry them well in a clean cloth, and fry them in lard or dripping”.

Yet legend attributes the first potato “chips” to George Crum, an American chef of African American and Native American heritage at Saratoga Springs, New York in 1853. Trying to appease an unhappy customer on August 24th, 1853 who had kept sending his French-fried potatoes back, complaining that they were too thick, too “soggy,” and/or not salted well enough. Frustrated, Crum personally sliced several potatoes extremely thin, fried them to a crisp, and seasoned them with extra salt. To Crum’s surprise, the customer loved them and soon came to be called “Saratoga Chips”. Food history truly appreciates Crum’s customer Cornelius Vanderbilt for triggering the innovation.

Since then packaging and production took over the regular potato chips to a mass commercial enterprise. In United Kingdom and Ireland, “Potato Chips” are referred to as “crisps” when eaten at room temperature, while when served hot and fried are “chips”. But in many places, largely these terminologies are interchangeable and not very specific.

The mass popularity of “potato chips” is evidenced by the regional varieties as well as local flavours and seasonings like dill pickle, ketchup. red paprika and so on. Additional variants like potato sticks, also known as shoestring potatoes; baked potato chips have been marketed. The “chips” craze has also been spread to corn, rice, arrowroot or cassava as well as root vegetables like carrots, parsnips and rutabagas. Though not known as chips, but crisps in some places, the snacking options are varied and plentiful.

One can be quite innovative with potato crisps, besides having them direct from the packet, they can be tossed into salads or crushed to make spicy mixes for “party snacks”, as “chaats”, sandwich fillers “sweet, sour or spicy and hot” and the like.  Though not advisable on a regular basis, “potato chips” are here to stay. Better late than never, what better to celebrate “National Potato Chip Day” (March 14th) by indulging in a couple of them. As they say, all good things come in small packages; keeping “potato chips” in moderation would help us in indulging these cravings for snacking once in a while, for a longer time.
